Ardmore Pedro Ximenez Sherry cask finish
Nose: Apple pie notes at first, with controlled sweetness and a touch of vanilla cream. Toffee develops, balanced by sharp orchard fruit. Leathery notes build, dusted with brown sugar and covered in salted caramel.
Palate: Richer than expected with the leathery notes up front, smoky and earthy. Dark dried fruit builds, along with apple fruit leather, dried apple slices and the apple pie from the nose, surrounded by a crisp sweet pastry shell. Gentle spice is joined by a hint of tar.
Finish: Leather fades to leave vanilla, barley sugar and stewed apples, with brown sugar and a touch of spice.
We love independently bottled Ardmore expressions. We wanted to produce another cask strength version, but this time impart PX flavours too! We have often said that there should be more sherried, peated drams available to whisky fans. And so, we decided to add one ourselves!
The other half of our Ardmore hogshead was reracked into a 125 litre Pedro Ximenez, quarter cask at the same time the other half was transferred into an ex-Laphroaig quarter cask. These two sister whiskies will be very different indeed after full maturation. These small, freshly sherry seasoned 125 litre quarter casks sourced from our preferred cooperage impart more sherried goodness due to an increased surface contact area between wood and spirit than regular larger hogsheads used by large distilleries. We are very confident that this will be a very flavoursome dram indeed.
We have also sampled this expression too. And within just one month of being re-racked this whisky had already started to darken and pick up raisin and date flavours. We can’t wait to see how this develops over the coming months where it will be sampled regularly. We expect it to be bottled in August / September 2025 though possibly sooner.
