  • Nose: Apple pie notes at first, with controlled sweetness and a touch of vanilla cream. Toffee develops, balanced by sharp orchard fruit. Leathery notes build, dusted with brown sugar and covered in salted caramel.

     

    Palate: Richer than expected with the leathery notes up front, smoky and earthy. Dark dried fruit builds, along with apple fruit leather, dried apple slices and the apple pie from the nose, surrounded by a crisp sweet pastry shell. Gentle spice is joined by a hint of tar.

     

    Finish: Leather fades to leave vanilla, barley sugar and stewed apples, with brown sugar and a touch of spice.

  • We have always enjoyed the subtle peated flavours of Ardmore. But we much prefer the whiskies produced by independent bottlers who have paid more attention to their cask management program and the quality of the wood they use. It’s a distillery which has always been popular with indies and so when we had the chance to acquire a good cask, we jumped on it.

    By chance we also came across some ex-Laphroaig quarter casks. And so, we took our Ardmore hogshead and used half of the spirit within it to fill the smaller quarter cask.

    These small ex-Laphroaig 125 litre quarter casks sourced from our preferred cooperage impart peat smoke with subtle medicinal flavours. Ardmore is the only Highlands distillery producing peated whiskies. And we believe this marriage of wood from the Highlands and Islay will produce an Ardmore with a real depth and complexity of flavour.
